I just wanted to thank you for reading and commenting on my "Just Start" post (just below). I appreciate your thoughts and look forward to writing about it and discussing with you more.
Like I said last Monday, we are in "use it up" mode around here. Last week I gave a list of stuff that we have on hand.
This week will incorporate everything we already have on hand and will look something like this...
Meals -
Monday - Noodles & Gravy (not the best name, but it's a classic we haven't had for awhile) w/ farmer's market veggies (carrots, green beans, and squash)
Tuesday - Leftovers - from Monday night and we have some from a potato quiche this past weekend
Wednesday - Roasted Chicken w/ potatoes and veggies
Thursday - Sandwiches on whole grain bread with veggies from the farmer's market and leftover chicken
Friday - Curry stir fry
Saturday - Maybe another potato quiche or hamburgers with a potato side dish - we'll see how many potatoes we have left!
Sunday - Leftovers (our last night here...)

ReplyDeleteBelieve it or not, I haven't ever made the "Chicken & Veggies" in the crockpot that you mentioned back on Sept 24. :-) Sounds like a great idea!
I'm trying to find cheaper meal plans that include more vegetables. I feel like we can eat cheaply, but it is not always healthy . . . so I'm on the hunt for inexpensive, healthy, not too complicated menus!! (Isn't everybody?!)

Raelene & Erica - I was just thinking about leftover and how easily I use them. I hate to think that there are more leftovers in the fridge than one meal (for all 3 of us). I like to stay on top of what gets left so that we don't waste food and have to throw stuff out.
ReplyDeleteBecky - I, too, always want to make sure we're eating healthy and not just cheap. I just put together a long list of vegetarian and vegan meals that I want to try (even though we are neither).
