using food from the neighborhood

2 items we received from neighbors have brought about recipes that I believe are worth sharing... 
The first is a peach dessert.  Ann from across the way brought me a bag of peaches she had just picked.  I used them for dessert for our small group gathering last week.

Directions:
Halve the peaches and pit them.
Place on a baking tray.
Fill with topping.
Topping recipe:
  • 1 1/4 cups all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 1/2 cup cold butter, cut into small sections
  • 1 tsp. vanilla
  • approx. 2 tablespoons cold water
Topping directions
Put all but water and vanilla into a food processor.  Pulse approx. 10-15 times until it is well blended, but not smooth.  Add in vanilla and water 1 tbsp at a time.  Mixture should be crumbly, but holding together somewhat (does that make sense?).
Bake at 350 F/180 C for 20 minutes or so.
We put them with real whipped cream and it was pretty amazing :).

The other is from a butternut pumpkin (I think any kind of pumpkin/squash would work though) that our neighbor brought over from her garden.  A rushed birthday gift for Clint when she found out.

Directions:
Cut pumpkin/squash into slices - halve it, then quarter, then halve those pieces.  Seed it and place on baking sheet.
Pop in the oven at 425 F/200 C with a drizzle of olive oil.  I roasted them for about 45 minutes, but just roast until they are soft. 
Into a decent size pot put in
  • 2 potatoes - peeled and diced 
  • 1 onion chopped
  • 2 carrots chopped
  • 3 cups of chicken stock
  • 1-2 tbsp. curry powder, to taste
  • salt and pepper to taste
When pumpkin is done roasting, peel (which, of course, is so easy after being roasted) and add it to the pot.  Puree the soup with a hand held blender or put it into an upright blender.

You can add milk or cream, but we found it so creamy on it's own that we left it be.

(We got more peaches and grapes on Sunday night...all from people's gardens.  Love this.)
