So, yeah, many of the meals are just taken from stuff we still have from last week with a few new ones in the mix.
Breakfasts - Piece of fruit or smoothie, eggs & toast or cereal, yogurt (a big favorite right now!), coffee, juice
Lunches - fruit, veggies, noodles & cheese, leftovers, bread & peanut butter
Snacks - popcorn, fruit
Meals -
Monday - Meat & potato quiche with zucchini
Tuesday - Pasta (shrimp, broc, & Alfredo)
Wednesday - Pork BBQ (easy crock pot recipe) with zucchini & carrots
Thursday - Roasted Chicken
Friday - Chicken &/on Salad (with leftover chicken from roast)
Saturday - Leftovers
Sunday - Chicken Salad Wraps
This weeks' shopping list - Meijer
- Eggs
- 1/2 & 1/2
- Coffee
- Vegetables - squash, carrots, broccoli (whatever is available)
- Potatoes
- Fruit - strawberries & apples
- Tomato
- Lettuce
- Cucumbers
You will need to cook dried lentils first - here's that recipe.
Ingredients:
- 1 cup Lentils
- 2 1/2 cups Water
- 2 bouillon cubes (beef, chicken, or vegetable are fine)
- 1 tsp. Salt
Directions:
Curried lentils with carrots over rice
- Put all ingredients into a medium size pot and bring to boil. Simmer for 20 minutes.

Ingredients for Curried Lentils:
- 1/4 cup butter
- 1 onion (chopped)
- 4 carrots (chopped)
- 2 cloves of garlic (minced)
- 1 tsp. salt
- 2 Tbsp. curried powder (I've been using McCormicks and it is SO GOOD)
- 2 Tbsp. lemon juice
Directions:
- In frying pan or wok saute - butter, onion, carrots and garlic
- Add the salt and curry powder to above ingredients for just a moment
- Add lentils (from above recipe)
- Add lemon juice and stir all together
- Serve over rice (any kind is fine)
