Curried Lentil Recipe

I thought I'd share a recipe that was one of our favorites before leaving school for the summer. It's taken from More-With-Less Cookbook (World Community Cookbook) and varied a bit. It is really cheap to make (like $2.50 for the entire meal!) and so good!

You will need to cook dried lentils first - here's that recipe.
Ingredients:
  • 1 cup Lentils
  • 2 1/2 cups Water
  • 2 bouillon cubes (beef, chicken, or vegetable are fine)
  • 1 tsp. Salt
Directions:
  • Put all ingredients into a medium size pot and bring to boil. Simmer for 20 minutes.
Then, the dish the lentils are for -
Curried lentils with carrots over rice
Ingredients for Curried Lentils:
  • 1/4 cup butter
  • 1 onion (chopped)
  • 4 carrots (chopped)
  • 2 cloves of garlic (minced)
  • 1 tsp. salt
  • 2 Tbsp. curried powder (I've been using McCormicks and it is SO GOOD)
  • 2 Tbsp. lemon juice
Directions:
  • In frying pan or wok saute - butter, onion, carrots and garlic
  • Add the salt and curry powder to above ingredients for just a moment
  • Add lentils (from above recipe)
  • Add lemon juice and stir all together
  • Serve over rice (any kind is fine)
I hope you enjoy it! My husband said he didn't think he'd like lentils, but ended up really enjoying this dish. We've also added beef to it once and that was great, just upped the price a bit (although, you can still make it for less than $5).
